Serve this hearty steakhouse favorite with lamb, roast beef, or poultry.

COOK TIME: 35 Minutes
Ingredients

2 tablespoons unsalted butter, plus more for the dish
1 clove garlic, halved
5 shallots, thinly sliced crosswise
5 10-ounce boxes frozen spinach, thawed and squeezed to remove liquid
8 ounces cream cheese, at room temperature
1 cup heavy cream
1 cup whole milk
1 cup grated Gruyère or Swiss cheese
Kosher salt and pepper
1 teaspoon ground nutmeg

Directions
Step 1  Step 1:
Heat oven to 375° F.
 
Step 2  Step 2:
Rub the sides and bottom of a buttered 8-inch baking dish with the garlic; discard garlic.
 
Step 3  Step 3:
Melt the butter in a skillet over medium heat. Add the shallots and cook until softened, 5 to 7 minutes. Transfer to a large bowl.
 
Step 4  Step 4:
Stir in the spinach, cream cheese, heavy cream, milk, and Gruyère or Swiss cheese. Add 1 teaspoon salt, 1/2 teaspoon pepper, and nutmeg, and stir to combine.
 
Step 5  Step 5:
Transfer to the prepared dish. Bake, uncovered, until bubbling and lightly golden, about 25 minutes.
